Make no mistake, Champagne isn’t just about big events. Sometimes it is the perfect accompaniment to a simple, comforting dish, such as scrambled eggs. And if you want to treat yourself, sprinkle on a little truffle to be sure to make a big impact.

Blanc de Noirs EPC is a perfect match for this easy-to-cook dish. It magnifies it in the space of a few bubbles. First, the red fruit notes enhance the creaminess of the scrambled eggs. Then, the iodised notes of champagne enhance the fragrant truffle. And finally, the freshness of the bubbles infuses the creamy eggs with a touch of lightness.

Recipe, serves 3

Chill your champagne between 8° and 12°.

Select 6 extra-fresh eggs and whisk them in a bowl.

Add salt and pepper.

Transfer the mixture to a small saucepan and cook in a bain-marie over medium heat.

Add a knob of butter and two tablespoons of crème fraîche per person.

To finish, grate slices of truffle over the creamy brouillade and serve immediately.
